MARTABAK SWEET PANDAN |
Recipe for 20 CM Pan
(Bottom diameter size of the pan), can make 2 pans.
Dough 1:
300 grams All-purpose flour (medium protein)
340 milli Water
1/2 teaspoon Salt
60 grams Sugar
3/4 teaspoon Baking Powder
(double acting Hercules brand)
2 Egg yolks or 1 whole egg
Steps:
- Mix all the ingredients above except the eggs using a low speed mixer for 5 minutes / can also use a handwhisk for 5-10 minutes, After the dough is smooth, add the eggs and mix well.
- Let the dough rest for 1-3 hours (minimum 1 hour)
- Cover with clingwrap/cloth
- After dough 1 has rested, divide the dough into 2 equal parts
Dough 2:
(make 2x)
25 milliliters of water
1/2 teaspoon of baking soda / 2 grams of baking soda.
1 teaspoon of pandan paste
Heat the Teflon on medium to high heat. Wait for the Teflon to heat up by sprinkling water on the Teflon. If it sizzles and evaporates, it means the Teflon is ready to use. Add the mixture of dough 2 just before the dough is baked. Stir well using a whisk. Then put the dough into the Teflon.
Wait until the dough rises and produces lots of bubbles, then reduce the heat. Sprinkle sugar to help the bubbles burst. Cover the Teflon and bake until the surface is cooked
Remove and immediately brush with butter. Sprinkle and topping according to taste
NB: This recipe produces 2 20cm pans
